Toast with Green Pea Spread, Avocado and Radishes

This was our lunch today. It was very tasty. The pea spread is nice alone, but the avocado and radishes added another dimension that was really nice. he pea spread also makes a nice dip for vegetables or crackers.

Green Pea Spread Toast with Avocado and Radishes

Yield: 8-12 slices

Ingredients:

for the pea spread:

  • 2 & 1/2 cups frozen peas thawed
  • 1 sweet onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons sesame seed oil
  • 1-2 teaspoons mild grainy mustard
  • slight pinch of salt
  • cracked pepper to taste

for the toast:

  • 1 avocado peeled, seed removed and sliced
  • 8-12 radishes, washed, and thinly sliced
  • handful chives, chopped as optional garnish
  • 8-12 slices whole grain bread, toasted

Green Pea Spread Toast with Avocado and Radishes

Directions:

to make the pea spread:

  1. Cook the peas in boiling water or steam them al dente.
  2. Heat the olive oil in a frying pan and sweat the onions and garlic until soft and glassy, be careful to not over-cook as the garlic becomes bitter.
  3. Drain the peas and place in a bowl.
  4. Add the sautéed onions and garlic and the grainy mustard and puree to a smooth texture.
  5. Add a very small pinch of salt and season to taste with cracked pepper.

to make the toast:

  1. Toast the slices of bread.
  2. Spread some of the pea spread on each slice of toast.
  3. Top the pea spread with slices of avocado.
  4. Place a few radish slices on top and optionally garnish with some chives.
